Recipe: Vitamin C packed fish tacos with mango coleslaw

Vitamin C isn’t just the go-to ingredient when you’re feeling under the weather anymore, it’s packing a punch when it comes to skincare. It’s worth including as much as you can in your diet, but instead of drinking sugary juices, try these delicious fish tacos with cabbage and mango coleslaw. 

 

We all know that getting your five-a-day is important, but with juicing becoming so popular many of us are accidentally consuming vast amounts of sugar, which can do more harm than good. A large glass of orange juice can contain as much sugar as fizzy cola, which could cause unwanted weight gain as well as skin breakouts.

There are a plethora of foods which contain vitamin C, we have combined some of our favorites and created a tasty recipe which shows how you can pack them into a healthy meal.

 

How to make fish tacos 

 

Serves 6

Ingredients

900g cod fillets

4 tsp chili powder

2 tbsp lime juice

2 tbsp extra virgin olive oil

1 tsp ground cumin

1 tsp garlic powder

salt and pepper to season

 

For the cabbage mango slaw

3 cups of finely sliced savoy cabbage

1 cup julienne cut mango

1/2 cup finely sliced red onion

2 tbsp cider vinegar

1 tbsp olive oil

1/2 serrano chile seeded and finely chopped

salt and pepper to season

warmed tortillas

sour cream

 

Method:

1. Make the rub for the fish by mixing the chili powder, lime juice, oil, cumin, garlic powder, salt and pepper in a bowl.

2. Lay the fish fillets in the rub and place to one side to let the flavors absorb for 20 minutes.

3. To make the slaw simply combine all ingredients in a medium bowl and toss to coat.

4. Grilled the fish on medium heat until flaky. Between 3 and 5 minutes each side should be enough.

5. Break up the fish and serve family style on tortillas and topped with the mango cabbage slaw and a dollop of sour cream.
